Hello! I hope you had a great weekend! Ours was pretty low key… Walter was not feeling great, so on Friday night/Saturday we watched ALL 10 episodes of Making A Murderer on Netflix. We got sucked in, it is hard not to. We also really got into Serial, a popular podcast, when it came out a little over a year ago. Both Making a Murderer and Serial analyze the trails of men who are in jail for murders and whether or not they have been wrongly convicted/there is enough evidence to convict. Both leave you wanting for more, which is indicative of great story telling I suppose. In both cases, I lean towards the convicted men being innocent, but I have read that both of the documentaries are trying to sway you that way, so maybe I am just gullible. Have you seen/listened to them? What are your thoughts?
Anyways… back to your originally scheduled programing.
I am really bad at eating breakfast, always have been. I really like breakfast foods, but I am just not very hungry in the morning. I know it is a bad habit, so I am trying to be better about it. These energy bites help out! Usually if I am in the mood to eat anything in the morning it is something sweet, but ice cream for breakfast is not a great life choice… although it has happened 🙂 These bites satisfy my craving for something sweet without being packed with sugar.
Now that I almost always work out in the morning (as opposed to at night when I used to swim in high school and college) it is extra important for me to eat breakfast. I don’t like to eat much before working out because it upsets my stomach, but eating one of these bites is better than eating nothing and it gives me a little burst of energy. They are also quick and easy to grab after a workout, especially if I am running out the door.
Dates are the secret ingredient in these bites- they add sweetness as well as help to hold the bites together. They are also high in fiber and other essential vitamins and minerals.
These bites are super easy to make! They don’t require baking. All you have to do is combine the ingredients in your food processor and then form them into balls!
I like to store them in a mason jar in the refrigerator.
- 1/2 cup roasted unsalted peanuts
- 8 dates, pitted
- 2 tbs raw agave
- 1 cup old fashioned oats
- 1/4 cup coconut oil
- 1/4 cup raisins
- 1/4 cup dried cranberries
- 1/4 cup dark chocolate chips
- In your food processor, process peanuts on high until smooth
- Add dates, process on high
- Add oats, agave and coconut oil, process on high until mixture starts to form a ball
- Add raisins, dried cranberries and chocolate chips, pulse until chopped, but not fully processed (you want small chunks of the add-ins)
- Dump mixture onto a clean, dry surface
- Form into golf-ball sized balls
- Refrigerate for best taste
