As a kid I lived for snow days. I used to get all worked up when they were calling for snow and all we got was a delay… or worse yet nothing at all. Anytime there was even a chance of snow I would be so excited about the prospect of a snow day that I would wake up multiple times during the night and look out my window to check the progress. Turns out I was just living in the wrong state… the kids in our neighborhood and all around the DC metro area got their 5th… yes 5th, snow day in a row today! Lucky ducks! As much as I loved snow storms as a kid I’m so over it now… It was fun and beautiful for the first day or two, but I am ready for it to be gone. It quickly turned into that slushy, brown, dirty snow and I’m done with it… bring on Spring!
An unfortunate side effect of blizzard Jonas was that we had to cancel our ski trip with our friends to Timberline in West Virginia. Walter and I had gone to Costco on MLK day to stock up for the trip so when we weren’t able to go we were left with large quantities of random snacks and things, most of which is non-perishable and a non-issue. But we had a large bag of avocados that were going to go bad if we didn’t eat them.
Some I used to make guacamole like a normal person, others I decided to get a little more adventurous with… The first thing I tried out were Carrot-Avocado Muffins…

I plan to stay away from baking with avocados for awhile. I hate the texture and the taste. Walter says he doesn’t mind them so I am grateful that they will not go to waste…
After this fail I waited a few days to try out another avocado-based dessert. On day 4 of being snowed in I finally got up my courage again and tried out Chocolate Avocado Mousse! I think it is delicious, but the jury is still out. I brought it to Nicecream and had 3 of my co-workers try it… One of them doesn’t like avocados!? I’m sorry, WHAT? I’m not sure we can continue being friends… 🙂 And the other 2 said they loved the texture, but wished it was sweeter… I can get behind that, so the recipe I am sharing with you below has 50% more agave than I actually used. It is the perfect mousse consistency and literally so easy! You can taste that there is avocado in it, but I don’t think it is terribly overpowering. Plus it is chocolate and healthy so you can’t really go wrong. Right?
- 2 ripe avocados
- 1/2 cup cocoa powder
- 3/4 cup agave
- 1/2 tsp sea salt
- 1/2 cup coconut milk
- Add avocados, cocoa powder, agave and sea salt to the bowl of a food processor
- Process on high until smooth
- Slowly add coconut milk and process on low until combined
- Refrigerate at least 2 hours before serving
